1 lb large carrots

Vegetable oil, for frying

3/4 tsp kosher salt

For the Chipotle Aioli:

4 tbsp mayonnaise

2 tsp lemon juice

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/4 tsp kosher salt

  1. Use the Full Circle Julienne Blade Vegetable Peeler to shave carrots into matchsticks.
  2. Heat about 3” of oil in a large, heavy bottomed pot to 350° F. When the oil is hot, carefully place half of the carrot strands into the hot oil and fry for 4-5 minutes until golden brown. Use a slotted spoon to remove fried carrots from the oil and place in an even layer on a paper towel-lined baking sheet. Repeat with the other half of the carrots and then toss all of the carrot fries with salt.
  3. To make the aioli, whisk together all ingredients until smooth. Serve with carrot fries.
