Ingredients:
1 lb large carrots
Vegetable oil, for frying
3/4 tsp kosher salt
For the Chipotle Aioli:
4 tbsp mayonnaise
2 tsp lemon juice
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/4 tsp kosher salt
Direction:
- Use the Full Circle Julienne Blade Vegetable Peeler to shave carrots into matchsticks.
- Heat about 3” of oil in a large, heavy bottomed pot to 350° F. When the oil is hot, carefully place half of the carrot strands into the hot oil and fry for 4-5 minutes until golden brown. Use a slotted spoon to remove fried carrots from the oil and place in an even layer on a paper towel-lined baking sheet. Repeat with the other half of the carrots and then toss all of the carrot fries with salt.
- To make the aioli, whisk together all ingredients until smooth. Serve with carrot fries.
