Vegan Broccoli Stem Pesto

2 broccoli stems, roughly chopped (about 1 cup)

1/3 cup pine nuts

Juice of 1/2 of a lemon

2 cloves garlic

2 tbsp nutritional yeast

1 tsp kosher salt

1/2 tsp black pepper

3/4 cup fresh basil, packed

4 tbsp olive oil



  1. In the bowl of a food processor, combine broccoli stems, pine nuts, lemon juice, garlic, nutritional yeast, salt, pepper and basil. Pulse until everything is broken down and coarsely chopped, about the size of breadcrumbs.
  2. Scrape down the sides of the bowl. With the food processor on low, stream in olive oil. Mix until combined and then transfer to a serving bowl. Drizzle with more olive oil if desired.
