2 broccoli stems, roughly chopped (about 1 cup)
1/3 cup pine nuts
Juice of 1/2 of a lemon
2 cloves garlic
2 tbsp nutritional yeast
1 tsp kosher salt
1/2 tsp black pepper
3/4 cup fresh basil, packed
4 tbsp olive oil
- In the bowl of a food processor, combine broccoli stems, pine nuts, lemon juice, garlic, nutritional yeast, salt, pepper and basil. Pulse until everything is broken down and coarsely chopped, about the size of breadcrumbs.
- Scrape down the sides of the bowl. With the food processor on low, stream in olive oil. Mix until combined and then transfer to a serving bowl. Drizzle with more olive oil if desired.
